There was a time I would be overwhelmed with a lot of leftovers. Not anymore. I actually plan to cook for Christmas dinner supplement, so I can play with the remains of the next or the following day. When I ham, I will cook extra potatoes, so I can be a tasty potato and bacon salad the next day to do with bin. I have ham and potato cubes, chop some onions and celery. Boil some eggs, and I have the ingredients for the salad. I want a creamy mustard dressing and decorate the salad with radishesslices and green pepper rings.

Sometimes I make scalloped potatoes if I do not have cooked ones. I just slice raw potatoes, onions and ham, layer them in a buttered casserole dish, season with salt and pepper and bake until the potatoes are soft. While they are baking I make either a white sauce or a cheese sauce to pour over the casserole when it comes out of the oven.

I also like a pasta ham salad. I cook bowtie pasta and combine it with cubed ham, frozen green peas, cherry Tomato, slices of red sweet onions and grated cheddar cheese. I'm either a creamy coleslaw dressing or apple cider vinegar type dressing, or both, and people can make their choice.

Natural ham for breakfast is great too. I suggest it finely and add it to pancake batter. Real tasty served with eggs and maple syrup. It is called Christmas hamcakes. There are many different dishes to make ham, to experiment, you can surprise yourself, I did.
